The Indonesian island of Sumatra produces some of the best coffees in the world. The complex and earthy coffees grown in the northern region of Sumatra is the finest of the traditional arabica coffees. The best of these coffees are sold under the names Mandheling and Lintong. These coffees are rich in body, but not too heavy; they have a lovely smoothness, but don't lack acidity. The coffee is grown on high, clay and fern covered plateaus near Lake Toba. Although there is not much in the way of shade, these coffees are grown on small lots and almost entirely without any chemicals. The coffee is processed in a unique three-step drying method and is double-picked or even triple picked to assure high-quality. These processing methods contribute to the exquisite flavor found in the cup of Sumatra coffee.
